Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts or thighs, if preferred
  • 2 cups potato chips classic flavor or any favorite varieties
  • 1 cup all-purpose flour substitute with almond flour for a gluten-free option
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil for baking

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Crush the potato chips in a ziplock bag until they resemble coarse crumbs.
  • In three separate shallow dishes, set up your breading station: one for the flour, one for the beaten eggs mixed with garlic and onion powder, and one for the crushed potato chips.
  • Season your chicken breasts with salt and pepper, then dredge each breast in flour.
  • Dip the floured chicken into the egg mixture, allowing the excess to drip off.
  • Coat the chicken in the crushed potato chips, pressing gently to adhere.
  • Place the breaded chicken onto a baking sheet lined with parchment paper, and spray them lightly with cooking spray or drizzle olive oil.

Cooking

  • Bake in the preheated oven for about 25 minutes or until the chicken is cooked through and edges turn golden brown.

Notes

Feel free to get creative—add cayenne pepper for a kick or use seasoned chip varieties for an extra layer of flavor. Let the chicken rest for a few minutes after baking to let the juices redistribute.
