Preparation

  • In a large pot, heat a splash of sesame oil over medium heat. Add the garlic and ginger, stirring until fragrant (about 1-2 minutes).
  • Pour in the vegetable or chicken broth and bring it to a gentle boil.
  • Add the frozen potstickers to the bubbling broth, allowing them to cook for about 5-7 minutes until they float to the surface.
  • Toss in the chopped scallions and baby spinach. Cook for an additional 2-3 minutes until the spinach wilts beautifully.
  • Stir in soy sauce, adjusting according to your salt preference. Let it simmer for a minute to meld those flavors together.
  • Ladle the soup into bowls, finishing with your choice of toppings.

Notes

Store leftovers in an airtight container for up to three days. Freeze for up to a month; leave potstickers out when freezing and add fresh when reheating.
