Ingredients
  

Main Ingredients

  • 2 packs Ramen Noodles You can substitute instant ramen or any egg noodles.
  • 8 oz Beef, thinly sliced Flank steak or sirloin works well. You can swap it for chicken or tofu.
  • ¼ cup Soy Sauce Use low-sodium for a healthier choice.
  • 4 cups Beef Broth Homemade or store-bought both work well.
  • 2 stalks Green Onions, sliced Scallions can substitute nicely.
  • 3 cloves Garlic, minced Fresh ginger can add an extra zing!
  • 2 cups Vegetables, mixed Think bok choy, bell peppers, or spinach.
  • 1 tablespoon Sesame Oil You can use olive oil if no sesame is on hand.

Preparation

  • Slice the beef, chop the vegetables, and mince the garlic.
  • Heat a splash of sesame oil in a large pot over medium-high heat.

Cooking

  • Add the beef to the pot and cook quickly until browned, about 2-3 minutes. Remove and set aside.
  • In the same pot, add another splash of sesame oil, toss in the minced garlic, and sauté for about 30 seconds until fragrant.
  • Pour in the beef broth and bring it to a gentle simmer. Add the soy sauce and stir well to combine.
  • Add the mixed vegetables and cook for about 3-5 minutes until tender but still vibrant.
  • Toss in the ramen noodles and cook according to package directions, usually about 4-5 minutes until tender.
  • Stir the cooked beef back into the pot and heat it through for about 1-2 minutes.
  • Ladle the ramen into bowls and garnish with fresh green onions.

Notes

For added spice, include chili paste or sliced jalapeños. You can substitute proteins or add more veggies as you prefer. Don't skip the green onions for added crunch!
