Ingredients

Main Ingredients

  • 1 pound beef sirloin or tenderloin Lean cuts are best for tenderness.
  • 1 medium onion sliced onion Adds sweetness and depth—use red or yellow based on your preference.
  • 2 cloves minced garlic Fresh garlic enhances the flavor significantly.
  • 8 ounces sliced mushrooms Opt for button or cremini for an earthy touch.
  • 1 tablespoon Worcestershire sauce Brings umami to your sauce; feel free to adjust based on taste.
  • 1 cup beef broth Homemade or store-bought, it’s the foundation of the sauce.
  • 1 cup sour cream For creaminess; Greek yogurt can be used for a lighter option.
  • 2 tablespoons flour Helps thicken the sauce; gluten-free flour is a good substitute.
  • Salt and pepper Essential for adjusting flavor.
  • Egg noodles or rice Both options work well to soak up the delicious sauce.

Instructions

Preparation

  • Slice the beef into thin strips against the grain to ensure tenderness. Mince the garlic, slice the onion and mushrooms, and have your broth ready.

Cooking

  • In a large skillet, heat a little oil over medium-high heat. Add the beef strips in batches to avoid steaming and cook until they’re browned (about 3 minutes). Remove from the pan and set aside.
  • In the same skillet, add the sliced onions and cook until they become translucent, about 5 minutes. Stir in the garlic and mushrooms, cooking until mushrooms have released their moisture and are tender.
  • Sprinkle the flour over the mushroom mixture and stir to combine. This is when the mixture begins to thicken beautifully.
  • Gradually pour in the beef broth while stirring, scraping the bottom to incorporate all those tasty bits. Bring it to a simmer until it thickens, stirring occasionally.
  • Once thick, stir in the Worcestershire sauce and sour cream until fully combined.
  • Add the cooked beef back into the skillet and mix until everything is well-coated in the sauce. Adjust salt and pepper to your taste.
  • Serve over egg noodles or rice for a heartwarming dish.

Notes

Substitute beef for chicken or portobello mushrooms for a vegetarian option. Add fresh herbs for a pop of color and use whole-grain noodles for a healthier take.
