  • 2 cups cooked chicken, shredded or diced Leftover rotisserie chicken works wonderfully.
  • 1 cup shredded cheese (cheddar recommended) Monterey Jack or pepper jack can be used for a kick.
  • 1 can refrigerated biscuits The flaky kind; they are the heart of this dish.
  • 1/4 cup ranch dressing Substitute with Greek yogurt for a lighter option.
  • 1 teaspoon garlic powder For flavor enhancement.
  • to taste salt and pepper To elevate the flavors.
  • to taste fresh herbs (optional) Chopped parsley or chives recommended.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the cooked chicken, ranch dressing, shredded cheese, garlic powder, salt, and pepper. Mix until well combined.
  • Roll out the biscuit dough on a lightly floured surface, pressing each biscuit into a flat circle.
  • Place a generous spoonful of the chicken mixture in the center of each biscuit round.
  • Fold the biscuit dough over to create a pocket, pinching the edges to seal.
  • Place the sealed biscuit pockets onto a greased baking sheet.

Baking

  • Bake in the oven for 15-20 minutes until golden brown.
  • Let cool slightly before serving to ensure the cheese is ooey-gooey.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months. To reheat, bake at 350°F (175°C) for 10-15 minutes.
