  • 1 pound Brussels sprouts, fresh, trimmed and halved
  • 4 slices thick-cut bacon For a meatier, chewy bite
  • 2 tablespoons olive oil Can substitute with avocado oil
  • to taste salt
  • to taste black pepper Feel free to add red pepper flakes for a kick
  • optional Parmesan cheese, grated Can swap for nutritional yeast for a vegan alternative

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the Brussels sprouts under cold water and remove any outer leaves that look wilted. Pat them dry.
  • Slice the Brussels sprouts in half and place them in a large bowl. Add chopped bacon, olive oil, salt, and pepper. Toss to coat evenly.
  • Spread the Brussels sprouts and bacon mixture on a baking sheet in a single layer.

Cooking

  • Roast in the oven for about 20-25 minutes, flipping once halfway through, until the Brussels sprouts are tender and golden brown, and the bacon is crispy.
  • If using, sprinkle grated Parmesan over the top just before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or a skillet for best results. For a make-ahead option, prepare the mixture but hold off on roasting until ready to enjoy.
