  • 1 pound Italian sausage or your favorite variety for that rich flavor
  • 4 medium potatoes Yukon Gold for creaminess, Russet works well too
  • 1 medium onion sliced; adds sweetness and depth
  • 3 cloves garlic minced; fresh garlic is a must for depth of flavor
  • 1 bell pepper any color adds a crunch and vibrant color
  • 2 tablespoons olive oil for sautéing
  • Salt and pepper to taste
  • Fresh herbs like parsley optional but adds a fresh finish
  • Crushed red pepper flakes optional; add if you like a little heat

Preparation

  • Dice your potatoes into bite-size pieces, slice the onion and bell pepper, and mince the garlic.

Cooking

  • In a large skillet over medium heat, add the olive oil. Once hot, add in the sausage, breaking it apart with a spatula, and sauté until it’s browned, approximately 5-7 minutes.
  • Stir in the onion, bell pepper, and garlic. Cook for an additional 3-4 minutes until the onions become translucent.
  • Toss in the diced potatoes, sprinkle with salt and pepper, and mix well. Cover the skillet and cook for about 10-12 minutes, stirring occasionally.
  • Ensure the potatoes are tender and cooked through. If needed, increase the heat slightly and uncover to allow any remaining moisture to evaporate, providing crispy edges.
  • Remove the skillet from the heat, and garnish with fresh herbs if using. Serve warm.

Notes

For a lighter version, use turkey or chicken sausage. Add seasonal vegetables like zucchini or kale for a fresh twist. Top with cheese before serving for an indulgent treat.
