  • 1 pound sausage (pork, chicken, or turkey) Your favorite sausage option.
  • 2 large sweet potatoes, cubed Try using different colors of sweet potatoes.
  • 2 tablespoons olive oil Coconut oil can be used for a hint of sweetness.
  • 3 cloves garlic, minced Essential for flavor.
  • 1/4 cup honey Maple syrup is a great vegan option.
  • 1 tablespoon soy sauce Tamari for gluten-free.
  • Salt and pepper, to taste
  • Chopped parsley, for garnish Adds freshness and color.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper. Arrange them in a single layer on the baking sheet.

Cooking

  • Bake the sweet potatoes for about 15 minutes, or until they begin to soften and their edges turn golden brown.
  • While the sweet potatoes bake, heat a skillet over medium heat. Add the sausage and cook until browned and cooked through, about 6-8 minutes.
  • Once the sweet potatoes are ready, add them to the skillet with the sausage.
  • In a small bowl, whisk together the minced garlic, honey, and soy sauce. Pour this sauce over the sweet potatoes and sausage.
  • Stir everything gently to coat. Cook for an additional 5 minutes, allowing the flavors to meld together.
  • Once the edges are caramelized and aromatic, remove the skillet from heat and garnish with parsley.

Notes

For added nutrition, stir in fresh spinach or kale during the last cooking minutes. Try adding a splash of lemon juice before serving to elevate flavors.
