Ingredients
  

For the filling

  • 1 pound breakfast sausage (mild or spicy) – crumbled and cooked until golden.
  • 6 large eggs – whisked with a pinch of salt and pepper for fluffy filling.
  • 1 cup shredded cheddar cheese – melts into ribboned pockets of flavor. Substitute nutritional yeast for a dairy-free option.
  • 2 tablespoons milk or cream – stirs into eggs for silkier texture. Use unsweetened almond milk to lighten.
  • 1 small onion, finely chopped – softens and sweetens. Omit or use green onions for a fresher bite.
  • 1 tablespoon butter or oil – for sautéing.

For the wrap

  • 1 tube refrigerated crescent roll dough (or puff pastry for flakier texture).

Optional additions

  • chopped bell pepper, spinach, or a pinch of smoked paprika for warmth.

Preparation

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment.
  • In a skillet, heat butter and sauté onion (and bell pepper if using) until soft and translucent.
  • Add the crumbled sausage and cook until browned and cooked through. Drain any excess fat and set aside.
  • Whisk eggs and milk in a bowl, then scramble gently in a nonstick pan over medium heat until just set. Season with salt and pepper.

Assembly

  • Roll out crescent dough and separate into triangles or squares depending on the brand. If using puff pastry, cut into rectangles.
  • Spoon a layer of scrambled eggs onto each dough piece, top with a spoonful of sausage, and sprinkle shredded cheddar.
  • Roll each piece tightly, tucking the sides to form neat roll-ups. Place seam-side down on the prepared sheet.
  • Brush the tops with a little milk or beaten egg for golden shine.
  • Bake for 12 to 15 minutes, until puffed and golden brown.
  • Let cool for a couple of minutes, then serve warm.

Notes

Make-ahead: Assemble roll-ups and refrigerate for up to 24 hours before baking. To freeze: Bake, cool completely, then freeze for up to 2 months.
