For the Herby Ranch Dressing

  • 1 cup Greek yogurt Creamy and healthy.
  • 1/4 cup fresh herbs (parsley, dill, chives) Elevates the sauce; feel free to use your favorites.
  • 1 pinch salt For flavor.
  • 1 pinch pepper For flavor.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine diced chicken, olive oil, paprika, garlic powder, salt, and pepper. Toss until well coated.
  • Slice bell peppers and red onion. Add them to the bowl with the seasoned chicken and mix.

Cooking

  • Lay the chicken and vegetables evenly on a baking sheet lined with parchment paper.
  • Bake for 20 minutes or until the chicken is cooked through (165°F or 74°C) and the veggies are tender.
  • In a small bowl, combine Greek yogurt, chopped herbs, salt, and pepper. Stir until smooth and creamy.
  • Wrap pita bread in foil and place them in the oven for the last 5 minutes to warm up.
  • Once the chicken and veggies are cooked, stuff them into warm pitas and drizzle with the herby ranch.

Notes
