  • 1 pound Italian Sausage Sweet or spicy varieties work; chicken or turkey sausage for lighter option.
  • 1 pound Baby Potatoes Golden or red work beautifully; use regular potatoes cut into smaller chunks if needed.
  • 1 pound Green Beans Fresh is best, but frozen can be used; adjust cooking time.

Seasonings & Oil

  • 3 tablespoons Olive Oil Avocado oil is a great alternative.
  • 4 cloves Garlic, minced Fresh garlic preferred; can use garlic powder if necessary.
  • 1 teaspoon Dried Oregano Italian seasoning can also work.
  • to taste Salt and Pepper Use generously for enhanced flavor.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the baby potatoes, cutting them in halves or quarters depending on their size. Rinse and trim the green beans and set aside.
  • In a large mixing bowl, combine olive oil, minced garlic, dried oregano, salt, and pepper to create a marinade.

Cooking

  • Add the sausage, potatoes, and green beans into the bowl, and toss until everything is evenly coated.
  • Spread the mixture on a large sheet pan in a single layer, using parchment paper if desired.
  • Roast in the oven for about 25-30 minutes. Stir halfway through to ensure even roasting.
  • Serve warm once cooked, allowing a few minutes to cool before diving in.

Notes

Try adding seasonal veggies like bell peppers or zucchini for added color. A drizzle of lemon juice before serving can add a zesty touch.
