Preparation

  • In your slow cooker, place the chicken thighs, diced carrots, celery, onion, and minced garlic.

Cooking

  • Pour in the chicken broth, cream of chicken soup, thyme, and black pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender, and your kitchen smells incredible.
  • About 30 minutes before serving, remove the chicken thighs. Shred them with two forks and return to the slow cooker.
  • In a mixing bowl, combine the biscuit mix and milk until just mixed. Spoon the dumpling mixture on top of the chicken mixture in the slow cooker.
  • Cover and cook on high for an additional 30 minutes until the dumplings are fluffy and cooked through.
  • Stir in the frozen peas and let it cook for a few more minutes. Then, get ready to serve this deliciousness!

Notes

Add fresh herbs like parsley or dill for a burst of flavor. For a spicy twist, add a dash of cayenne pepper or some chopped jalapeƱos. You can swap chicken thighs for breasts or use vegetable broth for a vegetarian option.
