  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water For thickening at the end.

Preparation

  • Pat the beef cubes dry with paper towels — this helps them brown and develop flavor.
  • In a large skillet over medium-high heat, melt 2 tablespoons of butter and sear the beef in batches until golden on all sides.
  • Transfer the seared beef to the slow cooker. Add minced garlic, beef broth, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Stir gently to combine.
  • Dot the top with the remaining 2 tablespoons of butter, then cover and cook on low for 4 to 6 hours, or until the beef is fork-tender.
  • About 20 minutes before serving, remove the lid and whisk the cornstarch slurry into the slow cooker. Turn to high and cook uncovered until the sauce thickens slightly.
  • Taste and adjust seasoning. Scatter chopped parsley over the top and serve.

Notes

For a lighter version, use lean stewing beef and reduce butter by half. Add mushrooms and pearl onions for an earthy twist. Stir in heavy cream or cream cheese for a creamy sauce. For crisp edges, transfer cooked beef to a hot skillet for 2 to 3 minutes before serving.
