  • 3 pounds Chicken Thighs (bone-in, skin-on) You can use chicken breasts for a leaner option.
  • 2 medium Fresh Lemons Juice of two lemons plus slices for garnish.
  • 6 cloves Garlic Minced garlic for flavor.
  • 1 tablespoon Olive Oil For sautéing garlic.
  • 2 cups Chicken Broth Use low-sodium for a lighter version.
  • 1 cup Fresh Herbs Parsley or thyme preferred; dried can be used.
  • Salt and Pepper To season to taste.

Preparation

  • Pat dry the chicken thighs and season generously with salt and pepper.
  • In a pan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  • Place the seasoned chicken thighs in the slow cooker. Squeeze the juice of two lemons over them, adding the sautéed garlic and whatever remains in the pan.
  • Pour in the chicken broth, ensuring it covers the chicken halfway for tender results.
  • Sprinkle your fresh herbs over the top, and feel free to toss in some lemon slices for added zest.
  • Cover the slow cooker and set it to low for 6–8 hours or high for 3–4 hours.

Serving

  • When the chicken is tender and shredding easily, it's ready to be served. Plate it alongside your favorite sides.

Notes

Leftovers can be stored in the refrigerator for up to 3 days, or frozen for up to 3 months.
