Preparation

  • Season chicken breasts with salt and pepper, then place them at the bottom of the slow cooker.
  • Pour the brown rice over the chicken, spreading it evenly.
  • Pour in the chicken broth, ensuring the rice is submerged.
  • In a separate bowl, combine the lemon juice, garlic, oregano, thyme, and additional seasoning. Pour this mixture over everything in the slow cooker.
  • Cover the slow cooker and set it on low for 6-8 hours (or high for 3-4 hours).
  • Once cooked, fluff the rice with a fork and serve the chicken with fresh parsley sprinkled on top.

Notes

Consider adding frozen peas or carrots for color. For a spicy twist, add red pepper flakes. For added depth of flavor, sear the chicken before cooking.
