Ingredients
  

Chicken and Base

  • 4 pieces Boneless, skinless chicken thighs or breasts Use tofu for a vegetarian option.
  • 1/4 cup Lemon juice Fresh is best for maximum brightness.
  • 1 tbsp Lemon zest Enhances the flavor.
  • 3 cloves Garlic Fresh cloves preferred.
  • 1 cup Chicken broth Vegetable broth works as an alternative.
  • 2 tbsp Olive oil Can use avocado oil for a lighter taste.

Herbs and Seasoning

  • 1 tbsp Fresh parsley Chopped.
  • 1 tbsp Fresh thyme Chopped.
  • 1 tbsp Fresh rosemary Chopped.
  • 1 tbsp Salt To taste.
  • 1 tbsp Pepper To taste.

Rice

  • 1 cup Long-grain white or brown rice Fluffy and perfect for soaking up the sauce.

Instructions
 

Preparation

  • Rinse and pat chicken pieces dry. Season generously with salt and pepper.
  • Optional: Sear chicken in a skillet with olive oil over medium-high heat for 3-4 minutes on each side until golden brown.

Cooking

  • In the slow cooker, add seared chicken (or raw if skipped), minced garlic, lemon juice, zest, fresh herbs, and chicken broth.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is fork-tender.
  • Prepare rice according to package instructions about 30 minutes before serving, using some cooking liquid from the chicken for flavor.
  • Serve the chicken over the fluffy rice, spooning over the lemony broth.

Notes

For extra lemon flavor, add lemon slices to the slow cooker. Use veggies for added nutrition or swap fresh herbs with Herbes de Provence for different flavor. For a thicker sauce, mix cornstarch with water and stir in during the last 30 minutes.
