Preparation

  • Thinly slice the onion, chop the carrots, and core and slice the apples.

Layering

  • Place the sauerkraut at the bottom of your slow cooker.
  • On top of the sauerkraut, add the onion, carrots, and garlic.
  • Season your pork loin with salt, pepper, and Dijon mustard, then place it on top of the vegetables.
  • Scatter the sliced apples over the pork.
  • Sprinkle thyme or rosemary over everything.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  • Once cooked, shred the pork slightly with a fork and serve with sauerkraut and apples.

Notes

For added flavor, you can sear the pork loin before adding it to the slow cooker. Adjust sauerkraut to taste; rinse for milder flavor.
