Spices and Flavorings

  • 2 tsp Chili Powder Adds a hint of warmth; try smoked paprika for a different flair.
  • 1 tsp Garlic Powder Essential for that flavor boost.
  • 1/2 cup Cilantro Fresh and vibrant; omit if you’re not a fan, or replace with parsley.
  • 1 whole Lime Juice Brightens the dish; fresh lemon juice can be a good alternative.

Preparation

  • Combine frozen corn, chicken breasts, cream cheese, and chicken broth in the slow cooker.
  • Sprinkle chili powder, garlic powder, and cilantro over the mixture, stirring gently to combine.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, remove the chicken breasts, shred them with two forks, then return them to the slow cooker.
  • Drizzle lime juice over the mixture and stir to incorporate.

Serving

  • Serve warm, topped with additional cilantro and crumbled cheese if desired.

Notes

For a bit of heat, add diced jalapeños. Make it a fiesta by serving with tortilla chips and guacamole.
