Ingredients

For the Chicken

  • 4 pieces chicken (legs and thighs preferred)
  • 1 cup buttermilk (or yogurt mixed with water) for tenderness
  • 1 cup all-purpose flour for a crunchy coating
  • 1 teaspoon garlic powder or a fresh clove, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika smoked paprika adds a twist
  • Salt and black pepper to taste
  • Vegetable oil for frying, enough to fill the pan about an inch deep

Instructions

Marination

  • Begin by placing the chicken pieces in a large bowl, pouring the buttermilk over them. Sprinkle on a good pinch of salt and let it marinate for at least 30 minutes (or overnight in the fridge for extra tenderness). Imagine how the flavors will weave themselves into that juicy meat!

Preparing the Coating

  • In another bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper. Take a moment to enjoy the earthy aromas.

Dredging the Chicken

  • Remove each piece of chicken from the buttermilk, letting any excess drip off. Then, dredge it in the seasoned flour, coating evenly and pressing the flour in to ensure that crispy layer will really stand out.

Frying

  • In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. To test if it’s hot enough, drop a small pinch of flour into the oil. If it sizzles, you’re good to go. The oil will bubble and release a nutty aroma.
  • Carefully place the coated chicken pieces in the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to check for doneness—165°F is your magic number.

Draining and Serving

  • Once cooked, remove the chicken and let it drain on a paper towel-lined plate. Admire that glorious golden color before you dig in.

Notes

For variations, consider adding cayenne pepper for spice, mixing in dried herbs for flavor, or baking instead of frying for a healthier option. Store in an airtight container in the fridge for up to 3 days or freeze for longer storage.
