Ingredients
  

Main Ingredients

  • 1 head Cauliflower The star of our soup, providing a smooth and creamy base. You can also use frozen cauliflower.
  • 4 cloves Garlic Whole cloves roast beautifully, adding a sweet and savory depth.
  • 1 medium Onion Adds sweetness and layers of flavor when sautéed until golden.
  • 4 cups Vegetable Broth Use homemade for extra love or low-sodium store-bought for convenience.
  • 1 cup Coconut Milk For creaminess without dairy, bringing a hint of tropical flair. Almond or cashew milk can work too!

Spices

  • 1 tsp Cumin Earthy and warm; it gives the soup its depth.
  • 1 tsp Coriander Brightens the dish; a little goes a long way!
  • 1/2 tsp Turmeric For a health boost and a lovely golden hue.
  • 1/4 tsp Red Pepper Flakes Just the right amount of heat to awaken your senses.
  • to taste Salt and Pepper To taste.

Garnish

  • 1/4 cup Fresh Herbs (optional) Parsley or cilantro add a pop of freshness at the end.

Instructions
 

Preparation

  • Chop the cauliflower into florets, slice the onion, and peel the garlic cloves.
  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the onion and sauté until it’s soft and translucent, about 5 minutes. Then, toss in the garlic and sauté for another minute, until fragrant.
  • Stir in the cauliflower florets, cumin, coriander, turmeric, red pepper flakes, salt, and pepper. Cook for about 3-4 minutes, allowing the spices to toast slightly.
  • Add vegetable broth, bring to a boil, then reduce to a simmer. Cover and let it cook for 15 minutes, or until the cauliflower is tender.
  • Remove the pot from the heat and stir in the coconut milk. Use an immersion blender or carefully transfer to a countertop blender to puree until smooth and creamy.
  • Taste and adjust: Give it a taste and add more salt, pepper, or spices if desired.
  • Ladle the soup into bowls and sprinkle with fresh herbs, if using. Enjoy!

Notes

For added heartiness, consider throwing in some cooked chickpeas or shredded rotisserie chicken. For a festive twist, add a splash of lemon juice or zest. You can lower the calories by using less coconut milk or opting for light coconut milk.
