  • 8 ounces Rigatoni or any short pasta
  • 1 pound Chicken breast or thighs, cut small
  • 1 jar Marinara or crushed tomatoes
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon Red pepper flakes, optional
  • 1/4 cup Cream or shredded cheese, optional For extra creaminess

Instructions
 

Preparation

  • Boil pasta according to package instructions, then drain and set aside.
  • In a large pan, cook chicken in a bit of oil with salt and pepper until it is no longer pink.
  • Add chopped onion and garlic to the pan and sauté until softened.
  • Pour in the marinara sauce or crushed tomatoes and let simmer for 5 minutes.
  • Stir in the drained pasta and mix well to combine.
  • Finish the dish by stirring in a splash of cream or cheese, if desired.

Notes

This dish is customizable; feel free to adjust spice levels or add any veggies you have on hand. It's also great as leftovers the next day.
