Preparation

  • Slice the Pork: Cut the pork tenderloin into thin slices, about 1/4 inch thick.
  • Prepare the Veggies: Chop the red bell pepper, broccoli, and carrot.
  • Heat the Oil: In a large skillet or wok, heat the vegetable oil over high heat until it shimmers.

Cooking

  • Cook the Pork: Add the pork slices in a single layer and sear for about 2 minutes without stirring.
  • Add Aromatics: Stir in the minced garlic and grated ginger, cooking for about 30 seconds.
  • Add Veggies: Add the bell pepper and broccoli, stir-frying for 3 to 4 minutes.
  • Add Sauce: Drizzle in soy sauce and sprinkle Szechuan peppercorns, stirring for another minute.

Notes

For gluten-free, use tamari instead of soy sauce. Consider adding snap peas, zucchini, or mushrooms for extra texture. Adjust the spice level to your preference.
