Preparation

  • In a mixing bowl, combine the canned salmon (drained and flaked), breadcrumbs, beaten eggs, chopped green onions, sriracha, garlic powder, cumin, salt, and pepper.
  • Mix until thoroughly combined.

Cooking

  • Form the mixture into small patties, about 2 inches wide.
  • Heat oil in a skillet over medium heat. Once hot, add croquettes in batches, avoiding overcrowding the pan.
  • Cook for 3-4 minutes on each side until golden brown and crispy.
  • Remove from the pan and place on paper towels to drain excess oil.

Notes

For a pop of freshness, add fresh herbs like dill or parsley, or diced bell peppers for crunch. For a festive twist, mix in shredded cheese. Bake for a healthier option, brushing patties with oil and baking at 375°F (190°C) for 20 minutes, flipping halfway.
