Ingredients
  

For the Rice

  • 2 cups sushi rice Essential for that authentic sushi flavor and texture.
  • 3 cups water For cooking the rice.

For the Salmon Mixture

  • 1 lb fresh salmon fillet Look for skinless fillets for easier cooking.
  • 1/2 cup mayonnaise Creaminess that complements the salmon beautifully.
  • 2 tablespoons sriracha For that delightful kick! Adjust to your spice preference.
  • 1 tablespoon soy sauce Adds depth to the flavor.
  • 1 tablespoon rice vinegar Provides a lovely tang.
  • 1 green onion, chopped Freshness and color to garnish.
  • 1 sheet nori (seaweed) For garnishing and that edible ocean flavor.
  • sesame seeds Optional, but they add a delightful crunch.

Instructions
 

Preparation

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice and 3 cups of water and bring to a boil.
  • Reduce to low heat, cover, and simmer for about 15 minutes, or until the water is absorbed.
  • While the rice is cooking, cube the salmon into bite-sized pieces and place them in a mixing bowl.
  • In a separate bowl, combine the mayonnaise, sriracha, soy sauce, and rice vinegar. Stir until smooth and creamy.
  • Pour half of the sauce over the salmon and gently fold to combine.

Assembly and Baking

  • Once the rice is cooked, fluff it with a fork and spread it evenly in a greased baking dish.
  • Top the rice with the salmon mixture, spreading it evenly.
  • Bake in a preheated oven at 350°F (175°C) for about 15 minutes or until the salmon is cooked through and the top is slightly golden.
  • Remove from the oven and drizzle the remaining sauce over the top.
  • Sprinkle with chopped green onions, crumbled nori, and sesame seeds for that extra flair.

Notes

Consider using brown rice for a healthier option or add seasonal vegetables for freshness. Use fresh ingredients for the best flavor.
