Preparation

  • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Toss in the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  • In a mixing bowl, combine the sautéed spinach, cream cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until fully combined, and taste test for seasoning.
  • Using a sharp knife, carefully cut a pocket into each chicken breast without cutting all the way through.
  • Fill each pocket generously with the spinach mixture, securing each breast with toothpicks if necessary.
  • Preheat your oven to 375°F (190°C). Place the stuffed chicken breasts in a greased baking dish and bake for 25-30 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Once cooked, let the chicken rest for a few minutes before removing toothpicks. Slice, plate, and enjoy your creation!

Notes

Consider swapping goat cheese for cream cheese for a tangy twist, or add sun-dried tomatoes for an extra flavor kick. This recipe can also be made gluten-free.
