  • 2 cloves Garlic, minced A must for depth; if you prefer milder flavors, reduce the amount.
  • 6 cups Vegetable or chicken broth Use low-sodium for a healthier version; homemade broth amplifies the flavor!
  • 2 leaves Bay leaves These herbs elevate the taste with earthy notes.
  • 1 tsp Thyme, dried You can also experiment with rosemary.

Preparation

  • In a large pot over medium heat, drizzle a bit of olive oil. Add diced onions, carrots, and celery, stirring them together until they’re softened, around 5-7 minutes.
  • Stir in minced garlic and cook for another minute until it’s fragrant.
  • Add the green split peas, ham hock, broth, bay leaves, and thyme, stirring until everything is well-mixed.
  • Increase the heat until the contents come to a gentle boil. Then reduce the heat to low and cover the pot.
  • Let it simmer for about an hour, stirring occasionally. The peas will soften and thicken the soup beautifully.
  • Carefully remove the ham hock. If using shredded ham, you can shred and return it to the soup. Season with salt and pepper before serving.

Notes

This soup is a fantastic make-ahead option! Store leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze it for up to 3 months. Just thaw before reheating, and be prepared for the delightful aromas to fill your space all over again!
