Ingredients
  

For the Marinade

  • 2 tablespoons olive oil for searing
  • 1 teaspoon chili powder for a hint of warmth
  • 1 teaspoon cumin earthy flavor
  • 1 teaspoon garlic powder aromatic essence
  • 1 teaspoon onion powder sweet and savory
  • 2 tablespoons lime juice for a zesty kick
  • salt and pepper to taste

Main Ingredients

  • 1.5 lbs flank steak ideal for marinating
  • 2 bell peppers (any color) sliced
  • 1 large onion sliced
  • Fresh cilantro for garnish to brighten the plate

Instructions
 

Preparation

  • In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, onion powder, lime juice, salt, and pepper.
  • Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it.
  • Marinate for at least 30 minutes, ideally up to 2 hours in the fridge.

Cooking the Steak

  • Preheat your skillet to medium-high heat.
  • Remove the steak from the marinade and sear on the hot skillet for about 5-7 minutes on each side.
  • Let the steak rest for a few minutes before slicing thinly against the grain.

Cooking the Vegetables

  • In the same skillet, add a bit more olive oil if needed, and sauté the sliced bell peppers and onion until soft and slightly caramelized, about 5 minutes.

Serving

  • Combine the sliced steak with the vegetables in the skillet, toss together, and serve immediately with tortillas and toppings.

Notes

For a healthier version, substitute chicken or tofu instead of steak, and use Greek yogurt instead of sour cream.
