  • 1/4 cup Soy sauce Use low-sodium if preferred.
  • 3 tablespoons Honey Maple syrup can be used as an alternative.
  • 1 tablespoon Rice vinegar Lemon juice is a quick alternative.
  • 1 teaspoon Sesame oil Can substitute with olive oil.
  • 1 tablespoon Cornstarch Use arrowroot as a paleo option.
  • 1/4 cup Chicken broth Water with a splash of soy will work.
  • 3 Green onions, sliced For freshness and color.
  • 1 teaspoon Sesame seeds, toasted Optional, for added texture.
  • Salt and pepper To taste.

Instructions
 

Preparation

  • Slice chicken thighs into thin strips and season lightly with salt and pepper.
  • Bring a large pot of salted water to a boil and cook the noodles just shy of al dente according to package directions.
  • Drain noodles and toss with a little sesame oil to prevent sticking.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, chicken broth, and cornstarch until smooth. Set aside.

Cooking

  • Heat a wide skillet or wok over medium-high heat with a tablespoon of oil.
  • Add the chicken in a single layer and let it sear for 2 minutes, then toss until cooked through and golden, about 3 to 4 more minutes.
  • Push the chicken to the sides and add more oil to the center, then add minced garlic and cook until fragrant and just beginning to brown.
  • Pour the sauce into the pan and stir until it thickens and coats the chicken.
  • Add the cooked noodles and toss vigorously to coat, ensuring they soak in the sticky sauce.
  • Stir in sliced green onions and sprinkle with toasted sesame seeds before serving.

Notes

For a lighter twist, swap honey for a reduced amount of agave, and use Greek yogurt as a cooling dip instead of heavier sauces. This dish can also be customized with added vegetables for extra nutrition.
