  • 2 tablespoons rice vinegar balances sweetness with a bright tang

  • 1 tablespoon grated fresh ginger adds warmth and lift
  • 2 tablespoons hoisin sauce optional, for extra depth and sweetness
  • 1 tablespoon sesame oil finishing oil for a nutty aroma
  • 2 tablespoons vegetable oil for cooking can swap for avocado oil
  • 1 small carrot, julienned adds color and crunch
  • 1 cup snap peas or thinly sliced bell pepper for freshness
  • 2 scallions, thinly sliced and toasted sesame seeds for garnish

Preparation

  • Bring a large pot of salted water to a boil and cook the noodles according to package instructions until al dente. Drain and set aside.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, hoisin (if using), sesame oil, and half the minced garlic and ginger. This will be your sticky sauce.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper and add to the hot pan. Sear until golden and cooked through, about 5 to 7 minutes, stirring occasionally so the pieces brown evenly.
  • Push the chicken to one side, add a touch more oil if needed, and toss in the remaining garlic and ginger. Cook until fragrant (about 30 seconds), then add carrots and snap peas. Stir-fry for 2 minutes until vegetables are bright and slightly tender.
  • Pour the sticky sauce into the pan and bring to a gentle bubble. Add the cooked noodles and toss vigorously so every strand is coated in the glossy sauce.
  • Taste and adjust: add a splash of soy sauce for salt, a squeeze of lemon or extra vinegar for brightness, or a drizzle of honey for sweeter indulgence. Serve immediately with sliced scallions and a sprinkle of sesame seeds.

Notes

Make it vegetarian by replacing chicken with firm tofu or tempeh and using maple syrup for a vegan twist. Add heat by tossing in sliced chili or a pinch of red pepper flakes. It's meal-prep friendly; keep sauce separate and toss with freshly cooked noodles when reheating to avoid sogginess.
