  • 1 package Ladyfinger Biscuits These sponge cakes soak up the elderflower beautifully; you can substitute with sponge cake if needed.

Preparation

  • Slice the strawberries into halves or quarters, depending on their size, and set them aside.
  • In a large mixing bowl, whip the heavy cream with the sugar and vanilla until soft peaks form. Gradually fold in the mascarpone cheese until fully combined.
  • In a shallow bowl, combine the elderflower cordial with a little water. Quickly dip each ladyfinger into this mixture, ensuring they are moistened but not soggy.

Assembly

  • In a round cake ring or springform pan, layer the bottom with soaked ladyfingers. Spread half of the cream mixture over the layer and top it with half of the prepared strawberries. Repeat this process, finishing with a final layer of cream.
  • Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Serving

  • Once chilled, carefully remove the ring or pan. Decorate the top with remaining strawberries and a drizzle of elderflower cordial for an elegant finish.

Notes

Leftover Fraisier can be stored in the refrigerator for up to three days, but is best enjoyed fresh. You can prepare it a day in advance for better flavor.
