  • 1.5 lbs ground beef Use lean ground beef for a healthier version.
  • 1 cup breadcrumbs Freshly made or store-bought will work; you can even use whole wheat for added fiber.
  • 1/2 cup grated Parmesan cheese This adds a depth of flavor. Substitute with Pecorino Romano if available.
  • 1 large egg Acts as a binder; choose free-range for enhanced flavor.
  • 1/4 cup chopped fresh parsley Fresh herbs elevate the dish; basil or oregano can also be used.
  • 2 cloves garlic, minced Fresh garlic brings depth; garlic powder can work in a pinch.
  • 1 teaspoon dried oregano For that classic Italian flavor profile.
  • Salt and pepper to taste
  • 8 oz mozzarella cheese, cubed The heart of the stuffing—feel free to replace with provolone if desired.
  • 1/2 cup marinara sauce Store-bought works, but homemade is best for a personalized touch.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, parsley, garlic, oregano, salt, and pepper. Mix gently until just combined.
  • On a parchment-lined baking sheet, shape the meat mixture into a rectangle, about 1-inch thick.
  • Place the mozzarella cubes down the center of the meatloaf rectangle, leaving some space at the edges.
  • Fold the sides of the meat over the cheese, pinching the edges to seal.
  • Spread marinara sauce over the top of the meatloaf.
  • Bake in the preheated oven for 40-45 minutes, or until the internal temperature reaches 160°F (70°C).
  • Rest for 10 minutes before slicing.

Notes

Tips: Swap half the beef for ground turkey for a lighter option, or add spinach or chopped bell peppers to the stuffing. For a flavor upgrade, add balsamic vinegar or red wine.
