Cooking

  • In a large pot over medium heat, drizzle a splash of olive oil and add the chopped onion and garlic. Sauté until fragrant for about 3 minutes.
  • Add the ground meat, stirring to break it apart, and cook until browned, about 5-7 minutes.
  • Toss in the chopped bell peppers and cook until they begin to soften, around 3-4 minutes.
  • Pour in the diced tomatoes (with their juices) and broth. Stir to combine.
  • Add spices and bring the mixture to a gentle simmer.
  • Stir in the rice or quinoa and let the soup cook for another 15 minutes, until everything is tender and hearty.
  • Taste and adjust seasonings as needed, then serve hot topped with your favorite garnishes.

Notes

Customize with spicy jalapeños or add cream cheese for a richer texture. Great for meal prep and leftovers can be refrigerated or frozen.
