  • 1 pound ground chicken or turkey lean and quick-cooking
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1/2 cup ranch dressing use your favorite brand or homemade
  • 1 cup shredded cheddar cheese try pepper jack for a kick
  • 1/4 cup chopped fresh cilantro for garnish
  • 1/2 cup breadcrumbs or panko use gluten-free if needed
  • 1 large egg, beaten helps bind the ingredients together
  • Oil for frying or a light spray for baking choose according to preference
  • Optional: finely diced onion and minced garlic sauté before mixing if desired

Instructions
 

Preparation

  • In a large bowl, combine the ground meat, taco seasoning, ranch dressing, shredded cheese, breadcrumbs, beaten egg, cilantro, and any optional sautéed onion or garlic. Mix gently until just combined.
  • Shape the mixture into small, bite-sized balls (about 1 to 1 1/4 inches) and place them on a parchment-lined tray.

Cooking

  • For frying: heat 1/4 inch of oil in a heavy skillet over medium-high heat. Fry bites in batches until golden and cooked through, about 3–4 minutes per side.
  • For baking: preheat the oven to 400°F. Arrange bites on a lightly greased sheet, spray tops with a little oil, and bake for 20-25 minutes, turning once, until crisp and golden.
  • Drain on paper towels if fried, or let cool slightly if baked. Garnish with extra cilantro and serve warm with dips.

Notes

These are delightful on their own, but can also be served with a squeeze of lime or a cool sauce. For extra crunch when baking, toss bites in a thin coating of oil and panko right before baking.
