Casserole Ingredients

  • 1.5 cups diced rotisserie chicken Use good quality for best flavor.
  • 1.5 cups frozen peas and carrots
  • 1 can (10.5 oz) cream of chicken soup Can substitute with low-fat option.
  • 1-1.5 teaspoons Montreal chicken seasoning
  • 40 pieces frozen tater tots
  • 0.5 cups shredded cheese Experiment with different types of cheese.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a medium-sized bowl, combine the diced chicken, peas and carrots, cream of chicken soup, and seasoning until well blended.
  • Pour and spread the mixture into the bottom of a 9×9 baking dish.
  • Arrange the frozen tater tots on top of the mixture.

Cooking

  • Bake at 350°F for 35 minutes.
  • Remove from the oven and sprinkle the shredded cheese on top of the tater tots.
  • Return to the oven for an additional 10 minutes.
  • Once bubbling and golden, serve warm and enjoy!

Notes

This dish is versatile; serve it with a salad or add hot sauce for a kick. Can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
