Preparation

  • Preheat your oven to 375°F (190°C). Gather your ingredients for a smooth cooking experience.

Cooking

  • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the sliced mushrooms for about 4-5 minutes until golden brown and tender.
  • Push the mushrooms to the side and lay the chicken breasts flat. Season with salt, pepper, and garlic powder, cooking for about 6-7 minutes until browned.
  • Flip the chicken breasts over, sprinkle with crispy bacon, and pour the chicken broth and heavy cream over everything.
  • Reduce heat to low and sprinkle the Monterey Jack cheese over the chicken.
  • Transfer the skillet to the oven and bake for 15-20 minutes, until the sauce thickens and the chicken is cooked through.
  • Allow to rest for a few minutes before serving.

Notes

Tips: You can substitute heavy cream with Greek yogurt for a lighter sauce or add seasonal ingredients like spinach for extra flavor. Use fresh herbs for garnish and ensure bacon is very crispy for the best texture.
