  • 1 lb Chicken Breast, boneless and skinless Can substitute with tofu for a veggie twist.
  • 1/2 cup Peanut Butter Creamy or chunky, based on preference.
  • 2 tbsp Soy Sauce Gluten-free soy sauce can be used as a substitute.
  • 1-2 tbsp Lime Juice Freshly squeezed; lemon can be used as an alternative.
  • 1 tbsp Honey or Maple Syrup Use agave syrup if preferred.
  • Fresh Veggies (bell peppers, carrots, cucumbers) Use any fresh veggies on hand.
  • Whole Wheat Tortillas or Lettuce Leaves Tortillas for a filling option, lettuce for low-carb.
  • Chopped Peanuts and Fresh Cilantro For topping.

Instructions
 

Preparation

  • Slice the chicken into thin strips.
  • Heat a skillet over medium heat, add a splash of oil, and cook the chicken until golden and cooked through (about 6-7 minutes).

Make the Peanut Sauce

  • In a bowl, mix the peanut butter, soy sauce, lime juice, and honey until smooth.

Assemble the Wraps

  • Lay out your tortillas or lettuce leaves and place a generous scoop of chicken in the center, followed by fresh veggies.

Finished Preparation

  • Drizzle with peanut sauce, sprinkle chopped peanuts and cilantro on top, then roll tightly.
  • Serve and enjoy!

Notes

These wraps are best enjoyed fresh, but you can prepare ingredients ahead of time. Store in an airtight container in the fridge for up to 2 days. Marinate chicken for a deeper flavor if time allows.
