  • 2-3 pounds Pork Ribs Baby back or spare ribs are both delicious!
  • 1 tablespoon Olive Oil For tenderness and to help the spices stick.
  • 1/4 cup Brown Sugar Adds a rich sweetness and caramelization.
  • 2 tablespoons Paprika For a smoky depth of flavor.
  • 1 tablespoon Salt To enhance all the lovely tastes.
  • 1 teaspoon Black Pepper For a hint of heat.
  • 1 tablespoon Garlic Powder Brings an irresistible aroma and taste.
  • 1 tablespoon Onion Powder Adds a subtle sweetness.
  • 1 teaspoon Cayenne Pepper (optional) If you’re looking for a spicy kick!
  • 1 cup Barbecue Sauce For basting and dipping. Choose your favorite!

Preparation

  • Start by removing the membrane from the back of the ribs—this will help the flavors penetrate better. Pat them dry with a paper towel.
  • In a small bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.
  • Rub the olive oil all over the ribs, then apply the spice blend generously. Coat every nook and cranny.
  • Get your grill fired up to medium heat (about 300°F).

Cooking

  • Place the ribs bone-side down on the grill. Close the lid and cook for about 1.5 hours, basting occasionally with barbecue sauce.
  • The ribs are done when they pull back from the bone and feel tender when pierced with a fork.
  • Let them rest for a few minutes before cutting. Serve them with extra barbecue sauce on the side.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They freeze beautifully! Just wrap tightly in aluminum foil and store in a freezer-safe bag.
