Ingredients
  

Salad Base

  • 4 cups Mixed greens (arugula, spinach, or kale) A variety will give depth and texture
  • 1 cup Cherry tomatoes Can substitute with diced bell pepper
  • 1 medium Cucumber Can use zucchini for a low-carb twist
  • 1 medium Avocado Creamy richness; or try white beans for a protein boost
  • 1 can Chickpeas Nutty flavor; swap with cooked quinoa if preferred
  • 1/4 cup Fresh herbs (basil, cilantro) Fresh is best; may use dried herbs in a pinch

Dressing

  • 1/2 cup Greek yogurt For a dairy-free option, swap with a dairy-free yogurt
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor
  • 1 clove Minced garlic
  • 1 anchovy optional For added flavor, omit for vegan

Instructions
 

Preparation

  • Rinse and dry your mixed greens. Toss them lightly in a large salad bowl to aerate.
  • Dice the cucumber and halve the cherry tomatoes. Add them to the bowl.
  • Carefully remove the pit and slice the avocado. Gently fold it into your greens and veggies.
  • For the chickpeas, if roasting, toss them with olive oil, salt, and pepper; roast at 400°F for 10-15 minutes. If using canned, simply rinse and add them straight to the salad.

Dressing

  • In a small bowl, combine Greek yogurt, lemon juice, minced garlic, and anchovies (if using). Whisk until smooth and creamy.

Assembly

  • Pour the dressing over the salad, and gently toss to coat all the ingredients. Adjust seasoning with salt and pepper as desired.
  • Finish your masterpiece with a sprinkle of fresh herbs for an aromatic touch!

Notes

Consider chilling the salad in the fridge briefly before serving to let flavors meld. Substitute zucchini noodles for mixed greens for a spiralized twist, and add grilled chicken, shrimp, or tofu for added protein.
