  • 1.5 pounds chicken cutlets (or 2 large breasts sliced thin) Thin cutlets cook faster and stay tender.
  • 3 to 4 cloves garlic, minced Base flavor of the dish.
  • 1 cup heavy cream Creates a smooth and comforting sauce.
  • 1/3 cup grated Parmesan, plus more to serve Thickens sauce naturally; add to taste.
  • 1/2 cup sun dried tomatoes, sliced Adds a sweet tangy bite.
  • 3 big handfuls baby spinach Wilts down quickly.

Seasonings

  • 1 to 2 tablespoons olive oil For searing the chicken.
  • to taste salt and pepper For seasoning the chicken.
  • optional Italian seasoning, crushed red pepper For added flavor if desired.

Instructions
 

Preparation

  • Season the chicken by patting it dry and hitting both sides with salt and pepper.
  • Warm the olive oil in a large skillet and sear the chicken for about 3 to 4 minutes per side until golden. Remove to a plate.

Sauce Preparation

  • Lower the heat and add minced garlic to the skillet, stirring for about 30 seconds.
  • Pour in the heavy cream, add Parmesan, and stir until smooth.
  • Stir in the sun dried tomatoes and add spinach, letting it wilt down for about a minute.

Finishing Touch

  • Return the chicken to the skillet and let it simmer in the sauce for 2 to 4 minutes until cooked through.

Notes

Serve with sides that soak up the creamy sauce, like pasta, rice, or crusty bread. Top with fresh basil or additional Parmesan if desired.
