  • Salt and pepper to taste essential seasonings
  • 1 can kidney beans, drained and rinsed (optional) for extra texture and protein

Optional Toppings

  • shredded cheese for topping
  • sour cream for topping
  • fresh cilantro for topping
  • sliced jalapeƱos for topping

Instructions

Preparation

  • In a large pot over medium heat, brown the ground beef (or turkey), breaking it up as it cooks until fully browned. Your kitchen will smell amazing at this point!
  • Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  • Stir in the fire-roasted diced tomatoes and tomato paste, mixing everything together until combined.
  • Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Stir to incorporate the spices evenly.
  • Pour in the beef broth and bring the mixture to a boil. Reduce heat and let it simmer uncovered for about 45 minutes, stirring occasionally.
  • If using, add the kidney beans during the last 10 minutes of cooking time.
  • Taste and adjust the seasonings as needed before serving.

Notes

Let your chili simmer longer for a richer flavor. For a spicier chili, throw in chopped jalapeƱos or a few dashes of hot sauce. Top with diced avocado and crumbled tortilla chips for a crunchy contrast.
