Ingredients
  

For the Dumplings

  • 1 cup all-purpose flour Use whole wheat flour for a healthier option
  • 1/2 teaspoon salt
  • 1/4 cup water Or vegetable broth for added flavor
  • 1 tablespoon finely chopped herbs Optional for extra freshness, like chives or cilantro

For the Soup

  • 4 cups vegetable broth Homemade or low-sodium store-bought
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, peeled and minced
  • 2 medium carrots, sliced
  • 2 cups bok choy or spinach, chopped
  • 1 tablespoon soy sauce Or tamari for gluten-free
  • to taste salt and pepper
  • to taste chili flakes Optional for heat

Instructions
 

Dumpling Preparation

  • In a mixing bowl, combine the flour and salt.
  • Gradually mix in the water until a soft dough forms.
  • Knead for a couple of minutes until smooth and pliable.
  • If adding herbs, incorporate them now!

Dumplings Shaping

  • On a lightly floured surface, roll out the dough to about 1/8 inch thick.
  • Using a round cutter (or a glass), cut out circles.

Filling and Sealing

  • Place a teaspoon of filling in the center of each dough circle.
  • Fold over and press the edges together to seal.

Soup Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion, garlic, and ginger, stirring until fragrant — around 2–3 minutes.
  • Pour in the vegetable broth and bring to a gentle simmer.
  • Add the sliced carrots and let cook for about 5 minutes until slightly tender.
  • Gradually add your dumplings into the simmering broth.
  • Stir gently, allowing them to cook for about 8–10 minutes until they float.
  • Stir in the chopped bok choy or spinach, soy sauce, and season with salt, pepper, and optional chili flakes.
  • Cook for an additional 2-3 minutes until the greens are wilted and vibrant.
  • Ladle the soup into cozy bowls and garnish with fresh herbs or chili oil.

Notes

Feel free to customize with seasonal vegetables or add cubed tofu for extra protein.
