  • 4 cups ripe watermelon, cubed
  • 2 medium cucumbers, diced (European cucumbers work great for less skin)
  • 1 cup crumbled feta cheese (or goat cheese for a tangy twist)
  • 1/4 cup fresh mint leaves, chopped
  • 1-2 tablespoons extra virgin olive oil
  • Juice of 1-2 limes lime for zest
  • Salt and pepper to taste

Preparation

  • Begin by gathering your ingredients. Wash the watermelon and cucumbers thoroughly to remove any residues.
  • Using a sharp knife, cut the watermelon into bite-sized cubes and place in a large mixing bowl.
  • Dice the cucumbers into similar-sized pieces and add to the bowl with the watermelon.
  • Sprinkle the crumbled feta cheese over the watermelon and cucumber mixture.
  • Chop the fresh mint leaves and add them to the salad.
  • Squeeze the juice of 1 to 2 limes over the salad, along with the olive oil. Gently toss to combine.
  • Season the salad with salt and pepper to taste, adjusting lime juice or olive oil as needed.

Notes

Best served fresh. To maintain freshness, store leftovers in an airtight container in the refrigerator. Enjoy within 1-2 days.
