  • 2 teaspoons baking powder For leavening

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine Greek yogurt and eggs. Whisk until combined.
  • In a separate bowl, mix almond flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture to maintain a light texture.
  • Pour the mixture into a greased or parchment-lined loaf pan.

Baking

  • Bake in the preheated oven for about 30 minutes, until golden brown.
  • Let it cool in the pan for about 10 minutes before transferring to a cooling rack.

Notes

Store leftovers in an airtight container in the fridge for up to a week. Slice and freeze for easy treats later. Reheat to restore freshness.
